Miso soup is not just a dish, it is a true healing elixir that harmonises your body and soul. In a macrobiotic approach, we always prepare it with three different vegetables to balance the energies:
🥕 Yang vegetables (growing towards the centre of the earth): carrots, iceberg beetroot
🎃 Yin vegetables (growing in all directions): onion, pumpkin
🌿 Green leafy vegetables growing towards the sky: pak choi, Chinese kale, kale, leek
This combination ensures that every bite you take reflects the balance of nature.
The magic of Shiitake mushrooms 🍄
Shiitake is not only special because of its taste, but also because it supports your immune system. It contains 1-3, 1-6 beta-glucans, which "feed" your immune cells and boost your immune system. Consuming it naturally boosts your body's immunity.
The power of Wakame algae 🌊
Wakame seaweed is a superfood of the seas: full of minerals such as iodine and calcium that nourish your body while adding a delicately salty flavour to the soup.
Miso soup recipe
Ingredients:
3 types of vegetables (yang, yin, and sky-growing vegetables)
1-2 dried shiitake mushrooms
1 small piece of wakame seaweed
1-2 tablespoons miso paste
Freshly grated ginger juice (optional)
A few drops of soy sauce (optional)
Preparation:
1. Soak the shiitake mushrooms and wakame seaweed for a few minutes, then chop them finely.
2. In a saucepan, cook the three vegetables (for about 10-15 minutes), mushrooms and seaweed together.
3. When the vegetables are cooked, remove the soup from the heat.
4. Important! Never boil miso paste, as the valuable bacteria in it will be destroyed. Instead, in a small bowl, mix 1-2 tablespoons of miso in the hot soup you have just taken out of the pot, then return it to the pot.
5. Season with freshly grated ginger juice and soy sauce if you like.
